Job Description

Pastry Chef

 

The Pastry Chef is responsible for managing the daily operations of our bakery, hotel, and restaurants, including the selection, development, and performance management of our team and ensuring that our guests have a world-class customer service experience. 

 

The Pastry Chef will be responsible for, but not limited to:

  • Daily production for items, including but not limited to, bread, croissant, brioche, desserts, cookies, cakes...
  • Management of a team of 10/20
  • Management of all ordering and acceptance of daily deliveries, and ability to keep things within set cost margins with suppliers
  • Handles daily scheduling and hours and management of payroll
  • Management of interviewing, hiring, training, and reviewing of BOH staff
  • The Pastry Chef will develop and create dessert menus and recipes with the team, including working on packaging
  • Management of organization of kitchen, including organization and cleanliness of dried storage, walk-ins, and dairy fridge
  • Daily quality checks of products
  • Attend certain outside events and programs

Qualification Requirements:

  • Minimum 10 years experience in Restaurants, Hotels, or Clubs focusing on bread, pastries, and desserts, with at least 6 years of Exec. Pastry Chef experience.
  • A genuine passion and knowledge of food and pastries
  • Prior experience with Upscale Pastry, cakes, ice cream, and chocolate
  • Experience with service and expediting banquets up to 800
  • Sociable and friendly to staff and guests.
  • Must be meticulously clean and aware of all food safety standards (Serv Safe Certification is a plus)
